Head Chef

Salary: 40000 - 50000 PerAnnum

ECS Recruitment is currently recruiting for a Head Chef for a client based in Dublin.
 
This role is the ideal opportunity for a charismatic and innovative chef with experience in Sous Chef roles to take the next step and to create his own name in the food sector with the client.
 
Our Client is an artisan food production and catering company who have their own premium range of handmade meals and baked goods for the retail suppliers and direct to consumers. They must enjoy meeting people as this role will require occasional client facing at both private and corporate events.
 
Responsibilities for this position include but are not limited to:
  • Managing and directing the Kitchen
  • Communicating with our coordinator and service staff when at events
  • Bringing innovation, ideas, creativity, and flair to the company’s menu & service
  • Following recipes sheets to ensure product consistency and high standard
  • Implementing and maintaining the company’s food hygiene and kitchen safety standards according to HACCP, FSAI and H&S
  • Responsible for the smooth running of the kitchen and manage areas of costings, profit, stock, wastage control, hygiene practices and training within the kitchen
  • To manage the agreed food cost targets in line with the agreed budget
Key Functions
  • Monitor and maintain consistent food standards and quality across all areas and during all stages of production and supply
  • Manage the day to day running of the kitchen
  • Place orders and purchase of all food and food related products using our preferred suppliers
  • Organise kitchen rotas for both on and offsite kitchen staff
  • To train and develop existing staff in new procedures and processes
  • Monthly stock takes
  • Cost all menus accurately and be mindful of cost-effective portion control
Skills and experience required:
  • A relevant formal chef qualification with a minimum of 2 years of experience in artisan/gourmet catering and NPD food production experience.
  • Experience in wedding/banqueting catering in both private venues and marquees
  • A deep understanding of ingredients and produce. Ability to take initiative and self-motivate.
  • A range of experience from five-star fine dining to rustic buffets and high-end corporate canape events.
  • A full, clean Irish/EU driving license and their own transportation is essential
  • 5 over 7 days (mostly Sundays off)
  • 40hrs per week but may change on business demand
